Just found you via Carlton/Twitter. Sounds like a great project! And at 10.5mm? There could be some serious distortion on the edges. Do you plan to edit it together in the end? It may help to have both high angles and street level shots of the market. The music totally depends on the mood you want to communicate. It could be a ragtime comedy sound or an ambient Ulrich Schnauss. I'd lean toward Ulrich and blend it with narrative footage on the street level that's shot at 30fps and slowed to 24fps.
